It may seem that all we do here at Gallery HQ is swan around living the highlife, which whilst on a few occasions is true, it isn’t always the case, especially not at 1am when we’re working hard to put the most recent issue to bed, like a small child it is sometimes reluctant to comply!

So, when an email drops into our collective inbox and requests the company of one of us to come along and be the guinea pig for a new surprise seven course tasting menu, with wine paring, out comes the hat and in go our names.  In this instance I was the name lucky enough to be drawn, so off I and a partner in crime went to Tassili at Grand Jersey one Friday night last month.

The evening started with us enjoying a drink on the beautifully refurbished Terrace, listening to the resident DJ spinning fitting tunes for a Friday night.  We were introduced to Oana, who would be our host and sommelier for the evening and escorted into the small and intimate dining room, with a table with views over to Elizabeth Castle.  

As this was a surprise tasting experience we weren’t greeted by a menu, instead it was explained that executive chef Nicolas Valmagna, who joined the Michelin starred Tassili at Grand Jersey in January, had chosen his favourite dishes from previous menus, to create the delights we would be eating. The theme of the menu was one of land and sea and each course would alternate between the two, and would be fittingly paired with a wine chosen to complement each dish.

Now the tricky thing is, as this concept is a break from the normal approach to a tasting menu, I don’t want to spoil the surprise element, although we have been told that the menu changes every day.  So instead let me talk you through just a few dishes, so that you can get an idea of how your evening might shape up.

To begin with the seven courses were preceded by not one, but two delightful amuse bouche, one to cleanse the palette and the other to start us off on our journey, an excellent piece of delicately smoked salmon topped with roe and complemented with flavours of watercress.  Next came the first of the starters, a zesty and zingy crab dish, both light and delicately flavoured with a kick that came from the yuzu gel that sat alongside it, this was paired with a light and crisp ‘White Blend’, 2010, A.A. Badenhorst, Swartland, which complemented the flavours perfectly.

Of the two main course dishes the one I’ll focus on was simply named Pork, ‘Classic Herd’ pork belly was cooked to perfection and accompanied by braised cheek, black pudding and an incredible compressed apple 'cracker', which on first glance looked like something you’d not be surprised to see at a Chinese restaurant, but its delicate texture melted in the mouth and tasted exactly as it was described, there was also a cheeky bit of summer truffle.  Served on a bold red plate this one of my favourites.

The dessert was the stuff of a sweet lovers’ dreams. Chocolate and orange are two flavours that marry together beautifully in most guises, but this was a whole other level. The homemade cardamom popping candy, a literal flavour explosion, was my highlight of the dish which was paired with a Pedro Ximénez ‘Don Pedro’ Gran Reserva, 1983,  Toro Albalá, Montilla Moriles.  The final course of the night was a delightful return to the savoury, but I’ll not ruin that for you, but lets just say it came rounded off the meal perfectly and came with a glass of exceptional Port.

Having never been to Tassili before this really was a lovely way to spend a Friday evening, the service was smooth and the atmosphere within the small dining room, once it filled up with more diners, was relaxed and the right side of informal.

 The successful wine pairing was perhaps the most notable part of the evening, but that will come as no surprise to most of those who know me, all of those chosen really did complement each dish brilliantly.

The surprise tasting menu changes daily and costs £87 for the seven course menu only and £130 with the wine flight. Tassili is open, Tuesday to Saturday.

Indian cuisine without the cholesterol but with all the aroma? It sounds like a dream come true, but it does exist.

We've lost the real meaning of Indian food. The reason why food tastes better when we're travelling? Because it is better. Cooked fresh to order, with the best spices, no wonder we're a little disappointed when our local takeaway doesn't deliver to the same standard as our favourite Mumbai haunt. And this is where the spice-coloured Saffrons restaurant aims to put all that right. It's the ultimate fusion food; Indian tradition partnered with French technique thanks to the influence of head chef Philippe Maratier.

A platter, laden with delicious sauces, samosas and mini poppadoms are brought as an appetiser, then it's on to the exquisitely spiced starters like the Saffron's Rattan with bite-sized Gressingham duck breast tikka and saffron cream dip, almond crusted lamb shami kebab and mint chutney, and home smoked tandoori salmon with crispy milk fritter. Presented like works of art, all the elements of these dishes echo the restaurant's Ayurvedic philosophy: balance in all things. Delicious palate-cleansing shots of coconut and fennel icecream appear between courses, proving the kitchen can handle soft flavours just as well as spice. My main course, tandoori monkfish with picked spice king prawns, curry leaves and squid salad is excellent with an exceptionally high quality of ingredients presented perfectly. Saffrons is pure fusion innovation.

The desserts? Well they just have to be experienced. Subtle flavours of cardamom and chocolate with a fruity punch where it counts. And almost too beautiful to eat. Almost. So will I be going back to a Madras after this? Not a chance...

A masterclass in Michelin-starred fine dining, the chic and cutting-edge Bohemia restaurant has received accolades galore for its exciting flavour combinations and luscious presentation. The setting features top end décor to match the high quality smooth service.

Dining doesn't come much more decadent than a Michelin-starred meal at Bohemia. Arrive in time for your table reservation and you'll be shown to reserved seats in the swish bar, set out with menus to browse over cocktails and amuse-bouches. It's impressive enough, but the real action begins in the restaurant where new chef Steve Smith has been let loose on prime local produce - with mouthwatering results.

Startling combinations melt into sublime concentrations of flavour and texture, and each intricate course is presented with precision and panache. Dishes like the haddock with hen's yolk and the signature scallops with truffle, celeriac, apple and smoked eel are exquisite and punctuated with beetroot, sorrel and liquorice flavours. This is fine dining with a fresh, modern edge. Even the butter gets the Steve Smith treatment, presented as a cone and infused with Jersey seaweed for a salty hit of umami.

Intricate courses

Main courses are far more intricate than the menu descriptions suggest and add an extra dimension to some carefully chosen local ingredients. The signature turbot in a creamy shrimp sauce gets a vinegar hit from the pickled grape and cauliflower for a superb balance of flavours, and the smoked beef sirloin and braised cheek was rich and mouthwatering with an excellent sauce of onions and girolles. These are refined and considered dishes which are presented beautifully on coloured plates to heighten the contrast of colours, flavours and textures.

Desserts are fresh, contemporary and highly seasonal. Expect an exquisite, crisp flavour experience with inventive touches, from the Jersey black butter with crystallised blackberries and pressed apple or the signature Chocolate Mayhem with its rich lime-tinged edge. And if you're really feeling innovative, the sommelier has come up with an alternative list of paired drinks for Steve Smith's menu that includes Lapsang Souchong tea, a shot of Grey Goose vodka and a local vintage cider.

A procession of seven courses of the finest local produce, matched with wines chosen from seven different countries? It's a dream come true for any gourmet - particularly when it's all served up in the exclusive surroundings of Ocean Restaurant.

Executive Head Chef Mark Jordan's Ocean restaurant is light, bright and peaceful with its white shutters framing sea views with the sunset in the distance, and the waiters seem to glide around; everything's quiet, calm and unhurried.

Effortless on the surface, fiercely well-organised behind the scenes. Our evening began with a smoked salmon and horseradish bon bon for an amuse-bouche, then a plate of miniature local spring vegetables topped with a silky poached quail's egg with hollandaise sauce and a surprisingly good English wine - the first I'd seen on a menu of this calibre. Next, a sweet and melting construction of local ham, langoustine and maple-baked foie gras was teamed with a clean German Riesling that came alive with the flavours of the food, and a rich and creamy truffle risotto topped with melt-in-the-mouth shavings of fresh truffle arrived with a glass of golden Grand Cru dry prosecco. Sea bass with scallops, lemon grass and a tangle of egg linguini was paired with a crisp Austrian wine that brought a hint of pepper to the dish, then a lingering red Zinfandel to soften a perfectly cooked thyme-roasted lamb, tiny potato gnocchi and soft lentil cassoulet.

Cheeses from local creations to English and French classics were offered with a tawny port, and finally a French rose-tinted dessert wine - not over-sweet, just fresh and light to match the 'three ways with apple' dessert, crispy Space Dust-infused apple nougatine with Calvados cream and black butter ice-cream. Ocean Restaurant, with its Michelin-starred menu and silky smooth service is a top choice for special occasions, and it's well worth it. Sophisticated, yet simple and relaxed at the same time, and so delicious you'll dream of going back.

Restaurant review

The ground floor houses a 50 cover restaurant, bars and 20 cover terrace for al fresco dining. The second floor delivers a stunning private dining room and bar suitable for special occasions and corporate hire. A real secret gem is the overgrown roof garden and cigar terrace, which can seat up to 25 comfortably.

There's something Parisian about Ormer. Maybe it's the location, on a pedestrian side-street a few steps from St Helier's buzzy main street. Or perhaps it's the sleek alfresco terrace with its polished service from a smartly-dressed team headed up by the charming Amar. And Ormer has definitely got the atmosphere: a frisson of foodie excitement surrounds Chef Shaun Rankin's brand new restaurant. 

A subdued colour palette with flashes of brilliance: mustard chairs and turquoise banquettes and carefully-chosen rich finishes all combine to give Ormer the elegant nostalgia of a gentleman's club, but with none of the snootiness. With a setting as carefully composed as one of Shaun Rankin's signature dishes, you know you're in for something special. 



Ormer's menu is a carefully balanced procession of precise dishes, designed to show off local ingredients to their best. 

A sophisticated starter of Jersey lobster ravioli with scallops, crab and coriander was a beautiful contrast of textures; mouthfuls of tender sweet seafood wrapped in perfect pasta with a crunch of fennel and ginger. An entrée of asparagus, local duck egg, morels and truffle was deliciously moreish; 'all my favourite flavours' said my dining partner. A glass of St Aubin white burgundy (£12) with its notes of fresh lime was Ormer's award-winning sommelier, Davide Buongiorno's recommendation for the seafood starter, and don't miss the chance to explore Ormer's carefully curated wine list, it's the place to discover new wines from small exclusive producers. 



Dishes with a twist

Main courses are substantial and superbly presented on white, almost shell-like plates. My Dover sole dish was a deconstructed fish pie with a twist - an elegant sole fillet, served goujon-style on top of a melting parsley mash with mussels, scallops, prawns, charred leeks and a tiny quail's egg in a rich, creamy sauce. Fish pie without the pie and utterly delicious. Davide matched it beautifully with a glass of red pinot noir with light cherry and blackberry flavours (£9.50). We tried one of Ormer's new dishes - a perfectly cooked lobster tail and fennel salad with a bowl of buttery crab linguine served on the side. The sweetness of the lobster was an excellent counterpoint to the creamy crab, with extra bite from the fresh fennel salad. Rich flavours with a refreshing salad edge; this is a dish designed to please, and a perfect combination of naughty and nice. To accompany it? 'It has to be champagne' says Davide - good thing Ormer has an excellent selection of champagnes by the glass (from £8.50).

If they're in season, try to order a side of silky smooth Jersey Royals - they're simply cooked by Shaun to melt-in-the-mouth perfection.

The desserts are no afterthought, save yourself for this tantalising smorgasbord of treats. We tried the signature chocolate brownie with popcorn, milk ice-cream and salt caramel - a dessert dreams are made of - and the exquisite rhubarb soufflé with mascarpone ice-cream and poached rhubarb. Imagine a cloud of concentrated rhubarb with an acid tang of spice on the side, and you'll be somewhere close to this elegant dessert.

Care and attention



Skill, technique and superb ingredients mark out the whole of Shaun Rankin's menu - but the same care and attention to detail has gone into creating everything from the bar snacks menu, served in the bar and on the roof terrace (Ibérico ham, salmon, crab and prawn salad, local oysters and cheeses) to the cocktail menu - a mixologist's dream with everything from a Melon Cosmopolitan to a classic Negroni, and a connoisseur-worthy selection of spirits.

Dress up for dinner, but don't stress about a stuffy atmosphere. At Sirocco, inventive cuisine is served up with all the style of fine dining but none of the fuss.

Alfresco table on the balcony with the setting sun in the distance, or a seat in the smart restaurant? Tough choice. In the end we opted to enjoy the evening air for a little longer on the terrace as the infectious buzz of conversion drifted up from Café Zephyr. The view's great - straight out across Weighbridge square to the harbour. You can even see Elizabeth Castle, and some clever design has meant that the hotel's perfectly angled to soak up the last of the sun's rays.

Warm breads and amuse-bouches arrive at your table - all the fine dining touches everyone loves, served in a relaxed, laid-back atmosphere. If this is the gourmet revolution then Sirocco's firmly on board. The wine list is extensive, as you'd expect from a hotel of this calibre, and the sommelier knows his wines, so expect a few new discoveries (the Chilean chardonnay is particularly good). The menu is fun and inventive; dishes like scallops and slow-braised pork belly with vanilla cider tickled our tastebuds, and ballotine foie gras with golden raisin purée and cashew nut brittle and sour plum jelly was delicious - an explosion of flavours.

And if you really want to get things hotted up, order the flambé. Steak cooked with a flourish in front of you - it's like watching your very own episode of TV's Masterchef, except that you get to eat the result. We also tried the venison and chocolate, which at Sirocco comes accompanied with blackberries. Chef Steve Walker is a whizz at whipping up adventurous flavour combinations and gourmets won't be disappointed. The dessert menu is just as indulgent with treats galore for chocoholics and those of us with a sweet tooth. And as Sirocco's terrace turns even more romantic with inky blue skies and twinkling lanterns on every table, they'll bring you blankets so you can stay outside with your coffee and petit fours. The only thing that'll convince you to leave? The knowledge that your comfortable bed is just a lift-ride away…

Chef

With a start in professional cooking at the age of 16, Steve Walker says it was either "the kitchen or the army". Now heading up Sirocco, he's glad he chose chef's whites and says there's nowhere better than his busy kitchen.
