Bohemia Restaurant, located within The Club Hotel & Spa, is delighted to announce it has retained its Michelin-star for the 17th Year, the first star under new Head Chef Callum Graham, who was appointed in January 2020. 

2020 can only be described as a baptism of fire for Bohemia’s new Head Chef Callum Graham. It has involved Graham successfully relaunching Bohemia with all new menus in January, then being forced to close in April due to the pandemic. He then re-opened again for the summer, one of Bohemia’s busiest summers on record, only to be closed again in the most important month of the year, December.

To keep Bohemia running throughout these months, Graham, alongside his talented team, pivoted the offering, launching Bohemia@Home, allowing Jersey to continue to enjoy Michelin-starred food from the comfort and safety of their own homes, and due to the huge popularity of the menus, they remain a permanent feature.

Despite all the changes and challenges, Graham and his team stuck to their plan to delight and surprise Bohemia dinners. The hard work by the whole restaurant team, including the front of house led by Dimitri Marqueteau, has paid off with fantastic feedback from both new and regular customers.

Callum Graham adds: “After the toughest of years for our whole industry, achieving a Michelin-star in my first year as Head Chef of Bohemia is just fantastic. We have worked so hard to deliver for our customers both in the restaurant and also to their homes through Bohemia@Home, and to receive this award feels particularly incredible this year. We can’t wait to re-open and welcome customers back and keep pushing Bohemia forward.”

Owner Lawrence Huggler comments: “This is Bohemia’s 17th year with a Michelin-star, but the feeling is just a little more special this year after what the team has had to cope with. For Callum to achieve what he has this year at only 29 years old, making him the youngest person to ever be awarded a Michelin-star in the Channel Islands, is outstanding and he is hugely talented. We are really looking forward to showcasing his innovative and culinary masterpieces at Bohemia going forward.”

Callum Graham learned his craft in France and Switzerland before joining Bohemia as Senior Chef de Partie, moving his way up the kitchen before being promoted to Head Chef last January. The Michelin Guide 2021 describes his dishes as ‘eye-catching’, and notes that ‘flavours are natural and well-balanced’, with and ‘occasional hint of playfulness, and he clearly understands how to use techniques to enhance rather than overshadow the produce’.

Bohemia is the only restaurant in the Channel Islands to hold a Michelin Star. Since opening, Bohemia at The Club Hotel & Spa has helped put Jersey firmly on the gastronomic map as a food-lovers destination, with the Michelin Guide 2021 highlighting “Jersey’s ingredients are well-represented” on Bohemia’s menus.
